Chanterêves’ Yume Utai is a Chardonnay sourced two-thirds from Maranges and one-third from the Pierres Dorées in southern Beaujolais, bringing together Burgundy’s cool-climate freshness with fossil-rich Bajocian limestone soils. Husband-and-wife winemakers Tomoko Kuriyama and Guillaume Bott ferment with native yeasts after a slow six-hour press, then age the wine in seasoned barrels followed by additional time on fine lees in stainless steel, with no fining and minimal sulfur. The 2024 is textured yet precise, with yellow apple, white flowers, lemon zest, hazelnut, and subtle brioche carried by bright acidity and a long, stony mineral finish.
