Thierry Allemand’s Chaillots is drawn from the domaine’s younger Syrah vines, planted on steep limestone and granite slopes in Cornas, and offers a slightly more lifted, approachable expression than Reynard without sacrificing depth. Allemand farms the terraces organically by hand, ferments with whole clusters, and ages the wine for two years in seasoned foudres and barriques before bottling unfined and unfiltered with minimal sulfur. The 2010 is a particularly complete vintage, with black raspberry, boysenberry, violet, smoked meat, black pepper, and crushed stone carried by vibrant acidity, finely grained tannins, and a powerful, remarkably seamless finish.
